- Luchi:
- 2 Cups Maida (Knead into a Smooth Dough)
- As Required: Lukewarm Water
- 1tsp To Taste Salt (Optional)
- 2 tbsps Ghee
- 1 Cup Chholar Dal (Chana Dal): Washed & Soaked in Warm Water overnight (at least- 2 hrs time)
- 500 ml water (To Boil Dal, with some salt)
- 3-4 tbsps Ghee
- 1/2 tsp Hing/Asafoetida
- 2tsps cumin Seeds
- 2 Red Chillies (Whole)
- 3-4 Slit Green Chillies
- 1-2 Bay Leaves
- 1 inch ” Cinnamon Stick
- 3-4 Cloves
- 3-4 Green Cardamoms
- To Taste Salt
- 1 tbsp Sugar
- 1 tbsp Ginger Paste
- 1/2 Cup Fresh Coconut (Grated/Cubed)- 1 Cup (If using Desiccated Coconut)
- 1 tsp Turmeric Powder
- 1 tsp Garam Masala Powder (Homemade)
- 1 tsp Cumins Powder
- 1/2 Bhuna Masala Powder (Homemade)
- Tomato Chutney:
- 2 Cups Tomatoes (Cut into Cubes)
- To Taste Salt
- 1 tsp Turmeric Powder
- 1/2 Cup Sugar
- 1 Lemon Juice
- 1 tbsp Cooking Oil
- Kesari Halwa:
- 1 Cup Rava/Suji
- 1/4 tsp Salt
- 1/4 Cup Sugar
- 2 tbsps Brown Sugar
- 4 tbsps Ghee
- 1/4 Cup Freshly Chopped Nuts (Whatever’s available)
- 1/2 Cup Milk
- as required Saffron Strands (Soaked in Warm Milk)
Steps to make Maha Ashtami Sandhi Puja Thali: Luchi, Cholar Dal, Tomato Chutney & Kesari Halwa
- Luchi: Take sufficient Oil in a deep wok & heat up over the high heat until hot enough
- Roll out the Luchis in your desirable round sizes and deep fry them in the heated oil until they fluff up from each of its sides
- Transfer it to the serving platter & serve hot with sabji, Chutney, halwa, dal, etc.
- Tomato Chutney: In a frying pan heat some oil over the medium heat & drop in the chopped tomatoes into it
- Add in the salt & turmeric powder & sauté until they start becoming little mushy...cover the lid & simmer the flame for sometime & allow it to cook until absolutely tender & mushy
- Open the lid- now, once it’s properly cooked add in the sugar & mix well until dissolved in it & the Chutney starts thickening
- Lastly, add in the lemon juice & mix well- turn off the flame & transfer it to the serving bowl & serve either hot or chilled
- Kesari Halwa: In a frying pan- Add in the ghee over a medium flame and roast the rava in it
- Once it’s light brown- Add in the milk, mixed with some water gradually & mix well until all combined
- At this point: Add in the Sugar & mix everything together until well incorporated
- Once the mixture starts leaving the pan add in the chopped nuts & the saffron milk & cook over a low -medium flame, for about 5 mins time, stirring occasionally
- Turn off the flame & transfer it to the serving bowl
- Chholar Dal: Boil the soaked Chana Dal in the pressure cooker with at least 3-4 whistles or until well cooked (depending on the water & the soaking time)
- The Dal should be well cooked but not at all mushy...Now, over a medium heat- Put on the frying pan with the measured Ghee & add in the tempering spices
- Sauté, until it releases nice aroma- Add in the Hing, salt, cumin & turmeric powder & sauté for a minute or so
- Pour in the cooked dal now & keep stirring continuously (flame should be low-medium), add in the sugar & the slit green chillies & mix well
- Once all well combined: Add in the garam masala & the Bhuna Masala Powder & mix all nicely
- Finally, turn off the flame, once it comes to a couple of boils & add in a dollop of ghee- Turn off the flame & let it sit on its standby position for about 15 mins time before serving hot with the Luchi, Rice, Parathas, Fried Rice, etc.
