Chirounji or charolis are almond flavored seeds which are used as cooking spice or dry fruits in some desserts . This unique chirounji barfi is a Diwali special delicacy of Madhyapradesh . Making this barfi is very easy & tastes really good .

Ingredients and spices that need to be Prepare to make Chirounji(charoli) ki barfi:

  1. 1 cup chirounji
  2. 1/4 cup mawa/khoya
  3. 1/4 cup almond powder
  4. 2 teaspoon cardamom powder
  5. 1/2 cup sugar
  6. 3-4 whole Cardamoms
  7. 10-12 strands saffron
  8. 1/4 cup ghee/clarified butter

Steps to make Chirounji(charoli) ki barfi

  1. First dry roast the chirounji for 2-3 minutes on medium low heat.It will enhance the flavor & increase the shelf life of the barfi.
  2. Now cool it down a bit & make a fine powder out of it.Then we have to prepare the sugar syrup, for that in a Saucepan add 1/2cup sugar & 1cup water.Then let it boil until we are getting a one string thick syrup.Add cardamoms & saffron to the syrup to bring a nice flavor.
  3. Next in a pan heat up ghee then add chirounji powder.Saute it on a medium low heat.
  4. Now add the almond powder & khoya respectively & saute thoroughly.
  5. Now add the sugar syrup to the mixture & on a low flame saute & mix everything together.
  6. Once the mixture is binding together & it is getting separated from the surface of the pan.switch of the flame.
  7. Now in a pre greased pan spread the mixture uniformly & level up the surface with the help of a spatula.fridge it for 2-3 hours.
  8. After 2 hours cut the barfi in desired shapes & it is ready to be served.
