Jalebi is a very famous and traditional sweet , specially eaten with poha , kachori , fafda as a breakfast in many parts of our country , usually it is made from plain flour or maida , I have tried making this with chestnut flour or singhare ka ataa , so that one can eat during fasting

  1. 1 cup chestnut flour/singhare ka ataa
  2. 2-3 tbsp curd
  3. Water as required
  4. 1 cup sugar
  5. 1/2 cup water
  6. 10-12 strands saffron
  7. 1 tsp lemon juice or milk
  8. As needed Oil or ghee for deep frying

Steps to make Falahari Jalebi

  1. In a mixing bowl combine chestnut flour and curd, mix well with a spoon
  2. Then by adding water little by little make a smooth but thick batter
  3. Cover and keep it for 6 - 8 hours for fermentation
  4. In the meantime prepare sugar syrup. In a pan or kadai put together sugar and water, let it cook on low heat
  5. When boil comes, then add lemon juice, so as to remove the impurities of the sugar and to avoid crystalization of sugar
  6. Now add saffron strands and let it cook to one string consistency, now switch off the gas
  7. After 8 hours when the batter is fermented nicely, mix well and pour it in a bottle, which has a nozzle, like we use for tomato sauce
  8. Now heat oil for deep frying, first on high flame, then make it medium
  9. Now start making the jalebi, by holding the bottle above the hot oil, pour the batter, by pressing the bottle, in circular motion, giving it the shape of a jalebi
  10. Then put them directly in the warm sugar syrup, let them for 2 minutes, then take them out in a serving plate, serve them hot
