  1. Firstly, grease the tray with ghee, in which you want to set the barfi. Keep it aside.
  2. In a mixing bowl, add milk powder and milk. Mix it very well. Make sure there should be no lumps in the mixture. Keep this mixture aside.
  3. Now wash and peel the bottle gourd. Remove the seeds and grate it.
  4. Heat ghee in a pan on low medium flame.
  5. Add in the grated lauki and saute till the moisture evaporates.
  6. Add sugar and mix well. As sugar melts, the mixture will become thin. Keep stirring.
  7. Now cover the pan and let the mixture cook for 2-3 minutes on low flame.
  8. Add in the milk powder and milk mixture. Give it a nice mix and cook till it incorporated well.
  9. Add rose water, cardamom powder, green food colour and few chopped nuts.
  10. Mix well. Continue stirring and cook until it leaves the sides of the pan.
  11. Switch off the flame and transfer this mixture into greased tray.
  12. Spread the mixture evenly.
  13. Sprinkle chopped nuts and press it gently.
  14. Cover and let it set for at least 2-3 hours at room temperature or 1:30 hours in refrigerator.
  15. Cut into desired shape and serve.
